When I was living on my boat I had a one burner stove and no fridge. One of my favorite things to make was Black bean soup. It was cheap and easy (kinda like me;) )

Black beans
1 can Coconut Milk
1 red bell pepper, diced
1 bunch of green onions, chopped
1 bunch of cilantro, chopped
Without draining the black beans, throw it all into the biggest pot you have and cook over medium heat until peppers are soft, about 15 minutes.

what's the quantity for the black beans or will you come by measure those out in person

I would use one large can of black beans for 2 people, we could get about 2 meals each out of it that way, if we didn't let the dog eat any. But we usually did let her have some as she was sooooooooooo good and the food made her so happy.:)

That must be quite a can of beans...2 meals for 2 people.

Between lentils and beans I'll bet you guys needed fans down below. I keep mine running all the time when I'm out as I think the wind helps me up into the 4th mode a bit faster.

I remember having lunch at the Y along with the homeless ( the Y provided lunch once a week and I was asked if I could help at the Y ) Black bean soup was being served at the Y when I pitched in. The Y had a way with putting on a good spread for the homeless. The community was a great supporter of events at the Y. Fond memories doing charity work
